These Cinnamon Chipotle Apple-Compote Quesadillas are better than yours.

Nothing like the title being a list of all the ingredients

Nothing like the title being a list of all the ingredients ...

Makes 4 quesadillas.

13 oz. can chicken breast with packing liquid

1.5 Tbs. butter

1.5 Tbs. olive oil

1 tsp. cinnamon

2 Tbs. apple butter

1 tsp. chipotle rub*

8 oz. shredded quesadilla cheese

4 slices white american cheese

4 burrito-size white soft tortilla shells

yet another Tbs. butter

In a skillet, melt the butter and add olive oil. Add chicken and liquid; crush chicken to shreds. Add spices. Mix well. Stirring regularly, simmer until there is no standing liquid but meat is still wet.

Spread 1 oz. shredded cheese over half a shell. Spread 1/4 of the meat across the cheese. Spread another 1 oz. shredded cheese over the meat. Take one slice of american cheese, tear into several thin strips, and spread out evenly across the top. Fold shell in half.

Melt a tablespoon of butter in a large skillet or griddle heated to 275 degrees and add the quesadilla. When golden brown, flip. Remove when gorgeous, make the other three, and enjoy this spectacular culinary delight.

*chipotle rub: Pampered Chef makes a chipotle rub that is perfect for this. Rubs aren't as strong as pure spices. If you can't find a rub, then cut back on the amount of chipotle seasoning to taste. There's a major-brand "cinnamon-chipotle" seasoning on the market; it works fine, but you'll want to cut back on the added cinnamon; it's also quite hot, so add to taste.

Really. In large saucepan, combine sugar, milk, cocoa, salt, and butter and mix well. Slit bean and scrape out seeds and pulp; add both pod and guts to the mixture. Bring to a boil and cover saucepan for 30 seconds to allow steam to wash sugar crystals down sides of pan. Stir mixture and bring it to a boil that can't be stirred down for 1 minute -- no less, or the sugar will be grainy. Then remove from heat; remove the vanilla beans, then stir in peanut butter until smooth. Add oatmeal and mix well. Do not use regular or instant oatmeal; quick-cooking oatmeal is essential to the success of this recipe.

Let the mixture stand for 10 minutes, stirring occasionally to let the oatmeal absorb some of the liquid.

Drop mixture by spoonfuls onto waxed paper or parchment lined baking sheets or Silpat sheets. Let cool until you can touch the mixture; then, if desired, reshape the cookies to make them more a ball shape. Let cool completely; store at room temperature.
_____

"I don't like dark chocolate," you might say. Well, as it happens, powdered cocoa by definition doesn't have cocoa butter in it; that means all powdered cocoa is "dark" cocoa. This variety just tastes a little better in this recipe.

** Now that you can get excellent quality vanilla beans for a low, low price off eBay (right now you can get a quarter-pound for $4.99 plus $3 shipping), you have no excuse. Buy a bag and sell the extras to your friends.

The only exception is the trade at the beginning of each Round, which will be explained at the end. The sample Round should be played with all cards exposed so that everyone can see the decision being made.

Equipment:
• 2 decks of Rook cards: 8 cards each of numbers 1 through 14, plus 3 Rooks (use any alternate card, such as an advertising card, for the third Rook). In this game color is irrelevant; numbers are all that matter.
• 10 Humans with good Spirits (8 will do in a pinch).
• A Really Big Table.

Setup:
• All 10 Humans should sit around the Really Big Table.
• Randomly choose one player to be the King (male or female is irrelevant); the person sitting at the head of the table is a rational choice. The player immediately to his left is the Queen (again, regardless of sex). Continuing clockwise, the next six players around are Nobles in order of decreasing preeminence. The ninth player is the Little Scum, and the tenth player – the one who sits at the King’s right hand – is the Big Scum.
• Deal the cards. There will be five remaining; they are distributed to the lowest five Humans (both Scum and the three lowest Nobles). If you play with fewer than ten Humans, the number of extra cards will vary but they always go to the Humans lowest in rank.

Game Play:
• The game is divided into Rounds. Each Round begins with the cards being dealt, and ends when all players are completely out of cards.
At the beginning of each Round, the King, Queen, Big and Little Scum all trade cards. This is the most complex part of the game, so the directions for this process are at the end of the rules.
• Each Round is divided into Hands.
• The King starts the first Hand. Play proceeds clockwise, following these rules:

When a Human leads a Hand, he can play a single card or a set of any given number. For example, he can play a 1, or two 1’s, or three 1’s, or four 1’s, but not a 1 and a 2. (Basic strategy is that he should play his very lowest number; and if he has a set of his very lowest number, he should play all of them).

After he has led, it is the next Human’s turn to play. Every card played must be higher than the number previously played and must be played in equivalent sets. For example, if the leader played a 1, the next card played can only be a 2 or above. But if the leader played a set of three 1’s, the next cards played can only be a matching set of three cards that are 2’s or above. There are three powerful Wild Cards in the game; they can be played at any time, they do not have to be played in sets to match the lead, and they immediately “win” that Hand. Winning a Hand will be explained in a moment.

A Human is not required to play a card; he may Pass. Once he Passes, however, he is not allowed to play a card for the remainder of that Hand. A Human can Pass even if he has cards which could be played; the reasons why he would do this will become evident through a minimal amount of experience.

A Hand is finished when all Humans have verbally Passed. This means that play does not stop when gets back to the Human who started the Hand, but continues around and around.

When the Hand is finished, the Human who played the last card “wins” that Hand. That Human then plays the first card(s) of the next Hand.

Some Humans will play all their cards before others. This is quite important, because the first Human to play all of their cards will become the King of the next Round. Play continues, however, and the next Human to play their last card will become Queen; the next will become the First Noble, and so on, until the last person who plays a card becomes the Big Scum. Therefore, each Human’s goal is to play all of their cards as quickly as possible.

After the last card is played, each Human physically moves to the new seat he has earned. The cards are gathered and redealt to begin the next Round.

The purpose of the game is purely Social Order, so no points are kept. Any number of Rounds can be played, and the ultimate goal is to be King after the last Round is played — to go home King Forever, long live the King.

Trading at the beginning of each Round:
Just after the cards are dealt to begin a Round, the following transactions must take place:

The King gives his two lowest number cards to the Big Scum.

The Queen gives her one lowest number card to the Little Scum.

The Little Scum gives his one highest single number card to the Queen (that is, he does not have to break up a set). For the purpose of this trading, he considers any Rook he might have as equal to his highest number. For example, if he has a Rook, a 14, two 13’s, and a 12, he gives the 12 to the Queen – his highest single number, because the Rook counts as a 14.

The Big Scum must give up two cards to the King. The first card he gives is his highest number card that is not in a set of three or more; the second is his highest remaining single number card. For purposes of this trading, any Rook is considered equal to his highest number. For example, if he has a Rook, a 14, two 13’s, and a 12, he must first give up his Rook (considered a 14), and then his highest remaining single number, which is now a 14. But say he has a Rook, two 14’s, two 13’s, and a 12; he will give up a 13 (because the Rook counts as a 14 and creates a set of three), and then his highest remaining single number, which is now the other 13. He would have the same result if he started with two Rooks and one 14, because that still makes a set of three.

    Coups:
If any Human other than the King happens to be dealt all three Rooks, he immediately calls a Coup. He moves to the King’s seat; the person seated to his left becomes Queen; to person to the new Queen’s left becomes the First Noble, and so on. The old King, regardless of where he sat in that order, becomes the new Big Scum.

    • Basic strategy:
1. Low numbers are bad, high numbers are good. Sets are more valuable than individual numbers; therefore, a single low number is extremely weak, and a set of high numbers is extremely strong.
2. Keep track of how many Rooks have been played – there are three total.
3. Don’t play a 14 until all the Rooks are out.
4. Sometimes it is best to save sets of moderate numbers such as sevens or nines, as they are much more likely to win a Hand near the end of the game.

Really. 2,231 batches of cookies later and I think I've got them close to perfect. Close... but still working on it

Really. 2,231 batches of cookies later and I think I've got them close to perfect. Close... but still working on it.

INGREDIENTS

2/3 cup real butter

1/3 cup butter-flavored Crisco

1 cup packed brown sugar

1 cup white sugar

1/4 cup honey, heated

2 eggs

3 TABLEspoons vanilla extract (Madagascar, if available)

1 teaspoon baking soda

2 teaspoons hot water

1/2 teaspoon salt

3-3/4 cups all-purpose flour

2 cups Ghirardelli 60% cacao bittersweet chocolate chips (see below)

1 cup milk chocolate chips

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).

Place butter in a microwave-safe bowl. If the brown sugar is clumping at all, place it in another bowl. Microwave both at 30% power. Watch closely; you want the butter to melt completely, but not go a second longer. Crisco should be room temperature.

Use an electric mixer to cream together the butter, Crisco and water, white sugar, and brown sugar until smooth.

Heat honey until thin; add and mix well.

Beat in the eggs one at a time. Mix thoroughly, meaning high speed for a long time. This should be smoooooth.

Change mixer to low speed and add the vanilla; mix thoroughly. Combine baking soda and hot water together (baking soda doesn't dissolve, so mix well), then add to batter along with salt. Mix thoroughly.

Manually stir in flour, then chocolate chips. Drop by large spoonfuls onto ungreased pans.

Bake for about 14 minutes in the preheated oven, or until edges are golden brown. Don't overbake.

NOTES

Butter vs. Crisco: I have always been a really big proponent of using the highest-quality natural ingredients available. No margarine or synthetic vanillin here. But through zoodles of tests, I've come to realize that in the case of these cookies, you need a little Crisco to keep them soft over time. Except that they are nasty with regular Crisco: you must use the butter-flavored Crisco. If you just can't bring yourself to believe it, or if all of the cookies are to be consumed straight out of the oven, just make it with one full cup of butter and no Crisco.

Chocolate chips: I recommend the specified chocolate for a couple reasons. The Ghirardelli melts in the cookie (unlike Hershey's) and has a wonderful, almost fruity overtone (which is perfect if you use orange blossom honey in the recipe, and even better than perfect when combined with the subtle undertones of Madagascar vanilla); in fact, it is even liked by people who swear they don't like dark chocolate. I find the brand of milk chocolate chips are less critical; but they do provide a nice balance to the intensity of the dark chocolate. 3 cups is fine, but heavy-duty chocolate lovers can push the recipe to 4 cups of chips with no problem.

Leaving WordPress...

Moving to YACS

Moving to YACS.

For those who care: I was never really satisfied with WordPress, which was running PlanetLovegrove for the past year. As much as other people love it, I just found it to have too much overhead (too many steps to make a post) and too difficult to configure and customize.

When I was helping with the TAG game, I needed a super quick and easy management system that would let me built a complex and powerful site with as little work as possible.

I tried Joomla, which was massively powerful but it was just a little too hard to work. Searching around, I finally settled on YACS, a little-known CMS from France.

It turned out to be a great choice - bjtag.net had forums, a blog, a wiki, and simple photo and video capabilities, with very little setup or ongoing management from me. So I'm bringing it over here. Hopefully you will enjoy the results!
